Black rice is enriched with anthocyanin, which is believed to be very effective in enhancing memory and reducing the risk of cancer and heart ailments. There are at least four types of black rice that can be found in the supermarket these days. These types include Chinese black rice, forbidden black rice, wild black rice and Indonesian black rice. In particular, the Chinese love to prepare bread and rice noodles out of black rice. The term “forbidden rice” also originated in China; this term signifies that black rice is only for the emperors and their preferred subjects. Due to the protein content of black rice, it is now becoming more popular in the U.S., especially among vegetarians. To make sweet and flavorsome black rice, just go though the following steps.

  1. Prepare the items needed for cooking.

    strong> Primarily, you will need two cups of black rice, preferably the “forbidden” variety, two cups of fresh coconut milk, two cups of water, four tablespoons of sugar, two tablespoons of butter, a half teaspoon of salt to taste, a half teaspoon of cinnamon, a half teaspoon of cardamom, fresh pineapple chunks and one piece of peeled and sliced banana. You will also need the following cooking utensils: a metal sieve, a small-sized sauté pan and a saucepan with a lid.

  2. Rinse and soak the black rice. After measuring two cups of black rice, pour it into the metal sieve and rinse it using cold water. Soak the rice overnight using the saucepan. Pour just enough cold water into the saucepan to cover the rice.

  3. Drain the black rice and mix the ingredients. Use the metal sieve to drain the rice. Before returning the rice to the saucepan, clean the pan first. Add the following ingredients one by one: two cups of fresh coconut milk, two cups of water, four tablespoons of sugar, half a teaspoon of cardamom and half a teaspoon of salt.

  4. Simmer the contents of the saucepan. Cover the pan with its close-fitting lid and put it over the stove. Set the stove to medium-high to simmer the rice for about 25 to 30 minutes. Ensure the rice is well cooked; it should be chewy and a little smooth. If you see portions that are not cooked yet, cover the pan and allow it to cook for another five to 10 minutes. Remember that the lid is hot, so make sure not to hurt yourself when handling it.

  5. Melt the butter and the rest of the ingredients. While waiting for the black rice to cook, heat your sauté pan to melt the two tablespoons of butter. After completely melting the butter, increase the stove heat to medium-high and add half a teaspoon of cinnamon and the banana pieces. When one side of the banana slices become brownish, flip over each slice. Add the pieces of pineapple chunks. Make sure to warm through the chunks before turning off the stove.

  6. Add the sautéed ingredients to the black rice. When the rice is completely cooked, carefully remove the lid of the pan and pour in the sautéed ingredients. Gradually mix, keeping the pineapple chunks intact. Replace the saucepan lid and let the sweet rice recipe warm together for two to three minutes.

  7. Serve the dish. Finally, turn off the stove. Serve the dish while hot. You can also put the dish into a casserole or ceramic bowl, cover it and then refrigerate. Later, serve cold.
