The technique involved in cooking the dish is similar to cooking arroz con pollo, but the spices and ingredients are very different. You can use various seasonings and herbs along with the two main ingredients to create numerous tasty dishes.

When cooking chicken and rice, it’s hard to go wrong once you have mastered the basic steps. Here is a recipe that involves cooking chicken with rice.

  1. Prepare your chicken thighs, olive oil, onion, garlic, cinnamon sticks, cherries, almonds, white wine and medium grain white rice.

  2. Make a chicken stock according to your own preference. This is essential since the stock will provide flavor for the rice. In making stock, make sure that you are using fresh chicken. Also, avoid boiling the mixture.

  3. Season your chicken well with salt and pepper then heat olive oil over medium heat in a skillet.

  4. Sautee onions in the skillet. Add your garlic and chicken thighs. Brown each side of the meat for about three to four minutes each, making sure that the meat is no longer pink. Remove the meat from the pan and set it aside.

  5. Stir the rice, using the same pan with the chicken drippings. Add additional oil only if necessary.  The secret to cooking rice is to avoid stirring it with a spoon or fork. Instead, agitate the rice by holding the handle of the pan and shaking it. This will aid in releasing starch.

  6. Stir in the dried cherries, cinnamon sticks and a splash of white wine. Afterward, add the chicken broth and bring it to a boil.

  7. Once it’s boiling, reduce the heat and cover. Cook the rice and the chicken for about 20 minutes. Check to see if the rice is done or it most of the liquid has been absorbed. Season to taste.

  8. To serve, remove the cinnamon sticks and sprinkle with almonds.

When cooking chicken and the rice, proper timing is always the key. Also, for every cup of rice, add two to three cups of liquid. You can check on occasion to see if there is still liquid left. If a small quantity is left and the rice is still not cooked, just add chicken broth and cover it again. The basic concepts remain the same in almost all chicken and rice recipes. You can cook it in the oven or in skillet, but overall the basic technique of how to cook chicken and rice rarely changes.
