To serve the chicken soup, you will need additional diced carrots, celery, fresh dill and parsley.

  1. Place the chicken in a stockpot and add all the vegetables and spices – onion, carrots, celery, parsley, thyme, garlic, peppercorns and bay leaf. Cut your vegetables into big chunks, which will result in a better flavor for your stock.

  2. Add two and a half cups of cold water to the pan and set to high heat. Using cold water will enhance the flavor. Do not stir the meat and vegetables; undisturbed, the ingredients produce a more powerful flavor.

  3. When the mixture is almost boiling, uncover it and set to simmer. Don’t allow the stock to reach a full boil or else the chicken will become tough. Remove any impurities (or the gray scum) floating in the stock. Continue simmering for one hour.

  4. Remove the chicken and let it cool for a few minutes. Once it’s cool enough to handle, remove the breast section and set it aside. Return the remaining parts of the chicken to the stock. Let it simmer for another three hours.

  5. Strain the chicken stock and let it cool a bit. Place it in the refrigerator to chill. This will force the fat to the surface, allowing you to remove it. You can either throw this excess fat away or use it to make matzo balls.

  6. When ready to use, reheat the stock. Meanwhile, shred the chicken breast into large pieces and add it to the stock. Add diced carrots, celery, dill and parsley. Once the vegetables are cooked, season the chicken soup with salt and pepper.

  7. You can add matzo balls and noodles or pair it with rice with the chicken soup.

When making chicken soup, it is better that you use fresh chicken. The meat of frozen chicken tends to be all dried up and less flavorful. A whole chicken gives off better flavor, but if you must decide on sections, chicken wings are among the best parts.
