  1. Gather all the ingredients for garlic potatoes: one large head garlic, salt, bay leaf, a half tablespoon olive oil, two thinly sliced garlic cloves, six tablespoons of milk, one sprig fresh thyme, two chopped scallions, three tablespoons of unsalted butter, two pounds of baking potatoes, one small stalk celery and pepper.

  2. Make your task easier by gathering the needed equipment: aluminum foil, chef's knives, measuring cups, measuring spoons, mixing bowls, potato mashers, potato ricers, small baking dishes, small saucepans, stockpot, wire whisks, mixing bowls and measuring cups.

  3. Preheat the oven to 325 degrees Fahrenheit and prepare the garlic while waiting for it to heat up.

  6. Boil water over high heat and reduce heat after boiling. Cook the potatoes until tender with the medium heat. After 20 minutes, pierce with the tip of a knife to check its doneness.

  7. Drain the potatoes well and clean them by peeling and separating other vegetables and herbs loaded earlier. Put the potatoes back in the pot they were cooked in and shake over medium heat until the chunks are dry. Cover and set aside.

  8. Pour milk and butter in a small pan and heat them up over low heat until warm. Pass the potatoes quickly through a potato ricer while you wait for the milk and butter to warm. Pour warmed milk and butter over the potatoes and whip in with a whisk. This will require a little bit of effort but the finer you make them, the better.

  9. Mix in roasted garlic and whip another 30 seconds until fluffy. Season with salt and pepper to taste and serve immediately with softened butter. Mashed potatoes are great when eaten while still warm. Serve with your choice of meat, fish or vegetables. Potatoes contain the good carbohydrates our bodies needs for energy. You can leave the skin on if you do not want to lose the fiber.
