How to Cook Vegetables on the Grill

Grilled vegetables are delicious because of their smoky flavor and crispier taste. You can easily make a complete, tasty meal for your family. Learning how to cook vegetables on the grill is not hard. Most vegetables can be grilled at medium hot temperature. One tip to remember is that it is best if the vegetables are neither parboiled nor peeled prior to grilling. Parboiling can affect the taste. In most cases, vegetables are cut into two in order to grill each piece easier. To keep each half from drying, you can apply vegetable oil on them. Often times, a covered grill will take 18 to 20 minutes, while an open grill will take only 8 to 10 minutes. The vegetables are cooked when they are softer when poked. There is another option for grilling vegetables. You can wrap them in foil. In effect, this process steams the vegetables because of the natural moisture trapped inside. Usually, grilling time will be about 12 to 15 minutes. Below is list of vegetables that are often grilled.

  1. Potatoes, especially red and fresh ones, are easier to grill. If your potato is a little smaller in size, you can grill it as one whole piece. But if it is a little bigger, it is advisable you slice it into to two to shorten the grilling time. Never forget to coat each piece with oil before grilling. To avoid overcooking, turn your potato every 5 minutes until they are completely cooked. Usually, grilling medium-sized potatoes will only take 18 to 20 minutes.

  2. Carrots are another wonderful choice for grilling. The medium-sized ones are easier to grill. Simply leave your carrots as they are. No need to peel them. Remove each green top, wash every



    piece, and dry. Directly apply olive oil around each carrot. The grilling time can take no more than 20 to 25 minutes. Just make sure you periodically turn your carrots every 5 minutes until they are all cooked. To fully enjoy this dish, prepare a glass of fresh lemon juice and roasted garlic.

  3. Corn can be cooked in several ways. First, you can remove the husk and use it to wrap the corn. Soak the wrapped corn in a bowl of water for about 30 minutes. Take the corn out and squeeze excess water out. Then grill for 25 to 30 minutes. The effect is somewhat like steaming. Second, you can simply husk the corn and directly grill it. Turn it from time to time to evenly cook.

  4. Tomatoes can be grilled either as one whole piece or sliced into halves. They are much easier to grill because it will take only 10 minutes or less. Grilling can effectively enhance their flavor, especially if you don’t have vine ripened tomatoes.

  5. Shitake mushrooms are the premium variety of mushrooms good for grilling. You can coat them first with oil and grill for 10 minutes at most. If your mushrooms are a little drier, you can soak them first in water between 20 to 30 minutes. Grill them for about 5 to 10 minutes at medium heat. You will know that they are cooked when they look golden brown. Be careful to not overcook them.

  6. Eggplant is another great vegetable for grilling. Many people use the Asian variety for grilling. If you have the large-sized variety, you slice them in rounds and coat each piece with olive oil. At medium heat, grill each slice for about 5 to 7 minutes on one side and another 5 to 7 minutes on the other side.
