How to Make Broccoli, Rice and Cheese casserole

Casseroles are a tasty meal staple for many families, and they range from creamy, cheesy pasta goodness to delectably comforting rice mixes. They are always a foolproof way to feed a hungry bunch and make their stomachs happy. With minimal preparation, relatively few ingredients, and a dependable oven, preparing a casserole is easy and worth the time. This reasonably easy recipe on how to make broccoli, rice and cheese casserole will make you a kitchen star in no time.

  1. For a standard batch of around six to eight servings, you need:

    a. 1 to 2 tablespoons oil (olive and canola are best and healthy too)

    b. 1 ½ cup uncooked rice (jasmine or long grain are best)

    c. 1 small white onion

    d. 1 ½ medium sized broccoli heads

    e. 1 can (15 ounces) cream of mushroom soup

    f. 1 cup of shredded cheddar cheese

  2. hop the onion into small pieces. Wash the broccoli heads, and chop into florets. Wash again to remove any remaining dirt, then drain. Set aside.

  3. To cook the rice, heat 1 tablespoon of oil in a small pot. Lower the heat to medium before adding in the rice. Stir and cook for two minutes. Add in a dash of salt with 1 ½ cups water. Continue cooking uncovered until the mixture boils. Cover the pot, and set the heat to low. Simmer and check occasionally until the rice has fully absorbed the water. Remove the pot off the stove, uncover, and lightly break up with a fork. Set aside.

  4. Preheat oven to 350 degrees Fahrenheit.

  5. To cook the rest of the ingredients, heat 1 tablespoon of oil in skillet or saucepan over medium heat. Once hot, throw in the onions. When onions are tender-crisp, stir in the broccoli, and cook for about 4 minutes or until slightly tender.

  6. Add the cooked rice to the broccoli in the saucepan. Mix in the cream of mushroom soup, half of the shredded cheese, and ground black pepper and salt.

  7. Pour the rice mixture into a 2-quart baking dish or casserole. Spread evenly, then sprinkle the remaining portion of shredded cheddar cheese on top.

  8. Bake for about 30 minutes.

  9. When the top is beautifully bubbly and golden brown, it is done.

Serve hot as a side dish with other vegetables, salads, fish, or your choice of meat. What makes this quick-cooking dish a family favorite is the mouth-watering creamy cheese sauce, followed by the great taste of broccoli and rice. Altogether, these ingredients make up the perfect hearty, nourishing side dish.
