The thing to remember about making frosting, and anything in the pastry section, is that everything is measured—even the time. This is exactly why making frosting will be very easy for beginners. Assuming you already have you desired cupcakes ready; it is time to start with your frosting:

  1. The first step is to make sure that you have all the ingredients and equipment that you need. The only kitchen machine that you will need is an electric mixer. As far as ingredients here is what you will need: 1 lb of cream cheese at room temperature, ¾ lbs (or approximately 3 sticks) of unsalted butter, also at room temperature, a teaspoon of pure vanilla extract, a half teaspoon of pure almond extract and lastly 1 ½ lbs of sifted confectioners’ sugar.

  2. First, put the butter, cream cheese, vanilla extract and almond extract into the bowl of the electric mixer. Set it at medium high speed and let everything mix together. Make sure that you don’t overdo the mixing though. It should take a minute and a half to two minutes for the mixture to be well incorporated, light looking and fluffy.

  3. At this point, reduce the mixer’s speed to low and add the confectioners’ sugar bit by bit. Continue to mix on low until the sugar is blended thoroughly with the mixture.

  4. Increase the speed again to medium high to continue incorporating the sugar into the mixture while making the frosting more light and creamy. This may take another minute and a half to two minutes. Again, make sure that you don’t overbeat the mixture or else it will separate and get soggy. You’ll know that your frosting is ready if when the frosting forms soft peaks on the whisk.

After you have made the frosting, it’s now time to frost your cupcakes. If you are going for a simpler look, just use a spatula or a knife to spread it onto the cupcake. If you want to be more creative, you can use a piping bag, selecting the tip that has the design that you want. The way you decorate it is entirely up to you depending on the look you want. You can add sprinkles, candies, syrups and the like. In order to make the perfect frosting, timing and precision is all you need.
