Well, until it is eaten by hungry kids, at least! The best type of icing for gingerbread cookies is called Royal icing. This is perfect because it sets and hardens quickly; making the process easy and less time consuming. Here are the steps to make the icing for gingerbread cookies:

  1. Prepare all the ingredients that you will need. For this recipe, you need the following: The whites of 6 eggs (at room temperature), 8 cups of powdered sugar, one teaspoon of cream of tartar and, if you want to have different colors, different food colorings.



  2. Using your electric mixer on a low speed, mix together the egg whites, powdered sugar and the cream of tartar. Stop the mixer from time to time to scrape the sides of the bowl, to make sure all the ingredients are well incorporated. Turn the mixer up to a medium speed and continue to mix for about 8 to 10 minutes or until you have a thick, shiny mixture.

  3. If you want your icing to have a bit more consistency and thickness, add a few teaspoons of powdered sugar and mix everything once more until well incorporated.

  4. You can now add the food coloring. If you need more colors, separate the icing into containers and add a few drops at a time. Mix well and check to make sure you are satisfied with the color. Remember that it is better to add a few drops to obtain the perfect color rather than having the wrong color on your first and only try. That can’t be undone.

  5. Since this icing dries and sets quickly, cover the icing with a moist paper towel. You are now ready to put the icing into paper piping bags and start decorating your gingerbread men.

When dealing with Royal icing, make sure that you don’t refrigerate it before using it for the cookies. It tends to become soft and somewhat sticky and unusable after refrigeration. Another thing to remember is that Royal icing will harden within 15 to 60 minutes after application to the cookies. Gingerbread icing can be crucial as the effect of the cookies depends largely on the icing design. It can’t be called a gingerbread man without the famous buttoned shirt and happy face. Kids love to eat these cookies and they will be more appetizing to their eyes if the design is good. You can even let your kids help design the cookies with you. Learning how to make gingerbread icing, especially using Royal icing, is definitely the best recipe for the job.
