  1. Get freshly-picked apples, about 36 to 40 medium-sized ones, to make a gallon of cider.



    e sweetness or tartness of the cider will depend on the variety of apples you choose with which to make it. Use Red Delicious and Fuji for sweet, Macintosh and Granny Smith for tart, or combine different kinds in various proportions. Just estimate the ratio depending on the result you want. Make sure the fruits are healthy, not bruised, battered or with dark spots. Wash very well. Without peeling, cut the apples in quarters and core.

  2. Put the quartered apples in a juicer to extract the apple juice. Alternatively, if you don’t have a juicer, put in a blender, puree and grind as finely as you can make them; pour into a container through a cheesecloth to strain the pulp; gather the pulp in the cheesecloth and squeeze tight to extract the last drop of juice.

  3. In a separate piece of cheesecloth, put what you have of the following: two cinnamon sticks, three to six whole cloves, one whole nutmeg, one teaspoon of whole allspice and one peel each of orange and lemon peels cut into thin strips. Tie up the cheesecloth with cooking twine to make a spice sack.

  4. Put the apple juice into a stockpot to boil. Add the spice sack and stir in enough maple syrup or brown sugar to taste. You may also add a dash of rum if you want to make hard cider. Cook the cider uncovered, to maximize enjoyment of the delicious smell and allow it to circulate in the kitchen. When it starts to boil, lower the fire and let it simmer for another 15 minutes to allow the spices to infuse flavor thoroughly into the cider.

  5. Turn the flame off, remove the spice sack and throw it away.

  6. Ladle the cider into mugs or suitable hot drink containers. You could add a cinnamon stick to each mug, or top it with a dollop of whipped cream and serve with a semi-sweet cookie. Allow the remaining cider to cool down thoroughly and store in an airtight container. It will keep for up to a week in the refrigerator.
