How to Make Strawberry Cheesecake Bites

  1.  A cheesecake has three main parts: the crust, the filling and the toppings. Before you start, make sure you have all the ingredients needed. For the crust, you need:

    a. 1 ¾ cups shortbread cookie crumbs

    b. 1 tablespoon sugar

    c. 3 tablespoons butter.For the creamy cheesecake filling, you need:

    g. ½ cup sour cream

  2.  To start, preheat the oven to 325 degrees Fahrenheit. Line a baking pan, preferably 13 x 9 x 2 in size, with foil or parchment paper and leave about 1 inch hanging over all edges. Set it asid

  3. To prepare the crust, combine shortbread cookie crumbs and sugar. Melt the butter, and stir it in until you have a sticky mix. Press the mixture firmly into the bottom of the pan to create a dense, thin base.

  4. For the delectable filling, allow the cream cheese to soften. In an extra-large bowl, combine it with sugar. Beat together using an electric mixer at moderate to high speed until the mixture is fluffy. Beat in the flour in portions. Next, blend in the eggs at low speed. Add vanilla, and beat again for a while. Finally, stir in sour cream until evenly mixed. Carefully transfer it into the pan.

  5. Bake for 40 minutes.

  6. While waiting, make the sour cream and honey glaze. In a medium-sized bowl, combine ½ cup honey, 1 ¼ cup sour cream, and 1 teaspoon vanilla. Mix together until smooth.

  7. Remove the baked cheesecake from the oven, and pour the glaze on it. Bake for another 8 to 10 minutes.

  8. Remove the cheesecake from the oven, and let it cool for an hour, preferably on a wire rack. Cover and chill in the fridge for 4 hours or more.

  9. Get the cheesecake, and lift it out of the pan using the excess ends of the foil or lining. Cut it into small-bite size squares, and top each square with a strawberry slice. Add an extra drizzle of honey for extra sweetness, if preferred.
