  1. Choose only the freshest bell peppers. Find peppers that are firm to the touch. Soggy or soft bell peppers are nearing deterioration. Choose peppers with unwrinkled skins that are free from any cuts. The stems should not be soft or moldy either. Pick bell peppers that are smooth and shiny. These will yield the best flavors.



  2. If you are not ready to use the bell peppers, store them properly to ensure freshness. While unwashed and dry, place the bell peppers in a dry plastic bag and store it in a refrigerator. The peppers will remain fresh for up to a week.

  3. Choose the perfect color for your stuffed bell pepper. Different colors denote different flavors; however, you may also want to use a specific color for aesthetic purposes. Yellow, red and orange peppers are milder and sweeter than the green. This is because green bell peppers are the unripe ones.

  4. When you are ready to make your stuffed bell pepper, preheat your oven to 350 degrees. Next, boil a large pot of water and add salt. While waiting, wash the bell peppers and cut off the stems, removing an inch off the top part of each pepper.

  5. Once the water starts to boil, add the bell peppers, making sure they are submerged in the water. Wait for about three minutes or until the color of each bell pepper brightens and the texture softens. Remove these peppers and set them aside.

  6. Prepare your stuffing. The most common stuffing is minced or ground meat mixed with flavors like rice, herbs and vegetables. A sausage stuffing is also a popular choice because it brings out complementary flavors. The stuffing is usually topped with a cheese sauce.

  7. Once you have made your stuffing, grease the inside and outside of each bell pepper with olive oil, which should result in a golden brown color. Arrange your bell peppers in an oven safe dish like Pyrex. Grease the dish with olive oil as well. Put the stuffing and sauce in each bell pepper and bake for 40 to 50 minutes.

The key to a successful dish like this is to have good quality ingredients especially the bell peppers. These are relatively easy to do and take only about 10-15 minutes of preparation. You can always experiment with whatever flavor of stuffing you want, but the basic steps on how to make stuffed bell peppers remain the same.
